Hand-harvested and certified organic, the 100-percent glera grapes are made into sparkling wine in the Charmat method of second fermentation in tanks. The vineyards lie in Italy’s northeastern Friuli-Venezia-Giulia region.
The color is light straw-gold, the bouquet a striking menage of apple blossom, smoke and steel, sustained by an upward surge of tiny glinting bubbles; on the palate, the sparkling wine practically glistens with bright acidity, while adding notes of lime peel and almond to its array, and, in the nose, a hint of jasmine; the texture is unusual for Prosecco — full-bodied, almost talc-like but part of the wine’s keen sense of lithe energy; the overall package is spare and elegant.
