I opened this bottle of Gilbert Picq et ses Fils Chablis 2020 to drink with a parsnip and spinach soup with cilantro salsa (the recipe didn’t work out very well). Our opinion of the wine was, “Oh, well, that’s O.K., not great.” I pushed the cork back into the neck, put the wine in the fridge and thought that we’d try it the next day. As the title of this post goes, “What a difference a day makes!” (Apologies to Dinah Washington, who made that song a classic.)
