Seven Springs is a label of Evening Land Vineyards, a project, in Oregon’s Willamette Valley, founded and overseen by well-known sommelier, winemaker and author Raj Parr and winemaker and manager Sashi Moorman. The winery produces primarily single-vineyard chardonnay and pinot noir wines and the gamay wines reviewed today, though there’s a Seven Springs Chenin Blanc 2022 that I would love to try. These are meticulously made wines, deriving from vineyards farmed to honor the intricate and perhaps idiosyncratic character of each plot. While Parr and Moorman are involved in multiple projects and estates, winemaker at Evening Land is John Faulkner.
