Founded in 1909, Sallier de la Tour lies in Alto Belice, near the city of Palermo on Sicily’s north coast. In 2008, Sallier de la Tour merged with the Tasca d’Almerita family of wineries. The estate consists of 50 hectares of certified sustainable vineyards, focused on two important grapes indigenous to the island — the white inzolia and the red nero d’Avola, as well as syrah. While I enjoyed the Nero d’Avola 2020 for what it is — a big-hearted, two-fisted accompaniment to full-flavored, fire-kissed fare — the Inzolia 2020 captured my heart. We drank the latter last night with risotto with asparagus, roasted garlic, Parmesan and chives. Yep, that was good.
