Cormorant Cellars' First Cabernet Sauvignon
Not quite 100% varietal.
Charlie Gilmore, who founded Cormorant Cellars in 2018, makes a blended red wine from the Black Ridge Vineyard in the Santa Cruz Mountains AVA, south of San Francisco, but the wine under review today is the winery’s first in which cabernet dominates, to the tune of 96 percent. Gilmore’s wines, of which I have written about the sauvignon blanc, a chardonnay, a grenache blanc-marsanne blend, and a red wine blend, derive from certified organic vineyards and are bottled unfined and unfiltered.
