Jay McDonald, working in Willamette Valley — his winery is EIEIO & Co. — doesn’t make a lot of rosé wine, concentrating rather on his primarily single-vineyard and single-block chardonnays and pinot noirs. In fact, he typically declines to expound on how he makes his rosés, which differ markedly from vintage to vintage, though he writes in detail about his other wines on his website. I asked him once for information about the rosé from 2020, and he responded, “Leave it alone. Just let people enjoy it.”
